THE BREWING PROCESS

Everything about Tribute is carefully considered – from the light-defying bottle, to the specially sourced ingredients, through to the sympathetic brewing process. Our Head Brewer’s first brew was Tribute and he puts immeasurable care into the brewing process, refining and improving it to ensure high standards continue to be met.

Tribute, like all ales, contains three main ingredients which, when yeast is added, are magically transformed into Tribute, the quality Cornish Pale Ale we know and love.

  • Barley Starts Everything

    Tribute is brewed through natural processes using the finest Cornish Gold malt and developed using Cornish-grown Maris Otter barley.

  • NATURAL

    A grain full of goodness, naturally containing protein, fibre and starch.

  • SOAKING

    First the barley is lovingly soaked to begin the germination process. This naturally unlocks the goodness from the grain.

  • Malting

    After soaking, the barley is slowly heated to dry out. This meticulous process is called malting. Malting starts the process of converting the barley’s starch into simple sugars. It’s these sugars that will be converted into alcohol.

  • Water is next

    Water (or Liquor as we brewers like to call it) can make up an incredible 95% of the finished product. Being such a vital ingredient, only the highest quality Cornish spring water is used and comes directly from our own source where the water is purified through age old granite.

  • Hops

    Hops give Tribute its bitterness and can also contribute to the citrus aroma. Hand-picked blend of Fuggle, Celeia and Willamette hops gives Tribute its unique zesty orange and grapefruit flavours.

    Now only one addition remains.

  • YEAST

    Completes the process

    Now it’s time for the yeast (our own Brewer’s yeast) to work its magic and begin the natural process of fermentation: converting sugar into alcohol and CO2.

  • AND TRIBUTE IS BORN!

    And that’s how we lovingly create Tribute… a good-looking pale ale that looks good in the glass and tastes even better!
